先作義式風味的內餡:

這次用了二瓶Mascarpone(馬斯卡邦),調和適量的自製青醬...
青醬
材料:
1公斤九層塔,,橄欖油500公克,鯷魚半罐(油也要一起下),
松子(熟的)70公克,鹽適量(我沒再加鹽的),蒜頭適量,起士粉70公克。
作法:九層塔去梗洗淨

雞腿肉去骨

用手去感覺較厚及有骨的地方....
骨頭去掉,較厚的部份片開...別忘了去筋...

均勻的灑上胡椒鹽
PS:皮的部份可以多灑一些,雞腿肉內部鹽少灑一些...
因為啊!待一會要捲進內餡,鹽太多會怕有分離現象

要捲鋁箔紙二側時,左右是相反方向喔!!

PS:另一作法,如果有麻繩,先把捲好的雞肉捲,放入冰箱冰鎮(定型),

蒜香麵包粉烤鮮魚
先做蒜香麵包粉:
材料:
市售的麵包粉.蒜末.匈牙利紅椒粉.迷迭香.巴西里(天然ㄟ最好).胡椒鹽.
作法:取一乾鍋,先炒麵包粉,再下蒜末等其他材料,略炒即可,千萬別上色喔!!

,風乾也可,但我都是用川燙,要快速喔!!
川燙完,冰鎮冰水,撈出擠乾..
取一果汁機,先下橄欖油,再下九層塔.蒜頭.松子.起士粉.鯷魚...我還會加黑胡椒粉...
打勻,裝瓶(瓶子要洗淨,用烘碗機烘乾),填入青醬後,
再倒入適量的橄欖油(阻隔青醬與空氣的接觸)
充分攪拌均勻備用
